I'm Freezing

VeggiesAndy has encouraged me for a long time to write some of my own entries on the blog and I have never taken the time to do it until now!  As the title of this post implies, I spent much of the summer complaining about the downright cold summer temps and torrents of rain.  But I’ve also been exclaiming that phrase a lot lately as well, even though it is hot and humid.  I hate to have anything go to waste and for years I also hated that I only had a precious few weeks to eat garden-fresh food.  In the past two years, I’ve started canning and freezing fruits and vegetables.  So, my main contribution to our farm, besides the initial planting and weeding, is the picking and preservation of everything we grow.   It’s gotten to the point that pretty much every meal throughout the year here includes one or more of our canned and frozen food.  That saves a lot of money and means that even the plethora of summer zucchini, peppers, broccoli, beets, beans, peas, spinach, herbs, peaches, blueberries, raspberries and, of course, tomatoes at this time of year, get put to good use later on!
