A little crabby


We had to use up some crab left over from Christmas (yes - it was packed sterile - so it was fine to eat). We wanted something a little more interesting than just lumps of crab in a cocktail sauce - so we busted out the crostini buttered up with garlic and lemon... and then topped it with crab mixed with roasted red peppers, small green onions, parsley and a bunch of other yummy things... then - to give it something extra special - after they came back out of the oven they were topped with a drizzle of sweet onions and apricot sauce I whipped up.
Really - really - good. The two of us at an entire platter of them. I'd post the recipe - but it was about as free form as the posting above.

That sounds (and looks) really good! Even though I know it's not really a dinner recipe, I've been tempted to make these sometime soon:
