Put the canner to work

beansLast year we bought a pressure canner and really put it to good use.  Given the weather this year and the issues we had with our tomatoes, the canner didn't get as much of a workout but we still managed to stock some of our shelves.

Canning our veggies and some fruits makes great use of all that ripens at the same time in August and is also kind of a fun thing for a Microbiologist to do when she has time off from teaching during the height of the gardening season!   This year I froze and canned a bunch of our green beans.  You can see my set up when I was canning a mix of the yellow and green beans.  My plan is to use some of these mixed cans as a base for homemade three bean salad in the middle of winter!
