The gift that keeps giving

This year - one of the gifts I received was an Ice Cream Maker... which makes more than ice cream!
So with the leftover mangos from our Christmas Dinner - and a desire to NOT consume anymore butter, eggs or anything too bad - I set out to create my very first concoction in the ice cream maker - Mango Sorbet.
It's from The Williams-Sonoma Ice Cream cookbook - Check it out in the "Recommended From the Farm" link on the right. It was AWESOME! Light, fresh, smooth and tasty.
We made the full batch which kept us in sorbet for a few days (the trick in eating homemade frozen treats is to let them sit out of the freeze for like 10-15 minutes because they freeze much harder than their store bought counterparts).
We have also made a half batch of the coffee ice cream in the recipe book - but with the addition of a handful of chocolate chips. Equally tasty - only far less healthy... but come on - we HAD to use up the heavy cream and whole milk before it went bad from the holidays! All good... and all gone!

How was the finished texture of the mango sorbet? Did you whizz it up into a puree first, or is it kind of stringy? We've made enough ice creams but never a sorbet...
The ice cream maker does a good job of mashing up the mango - but there was a little string in there too - I liked the extra texture.
