A Rainbow of...


Posts remain sparse this time of year as there is just so much going on - and we are also taking time to enjoy the waning summer. I mean - how can they not when almost daily there a hauls of zucchini of this magnitude that are just beckoning to be turned into soups - or grilled up - or cut into large chunks... all destined for freezing or canning operations that seem to run almost constantly in the kitchen.
Kelli has really taken lead on these efforts since she off for the balance of the summer - and the burgeoning shelves in the basement and nearly full freezers are a testament to the copious crops of our garden...
It's almost a chronological march through the seasons as you work backwards through the shelves of canned goods... from late summer crops in the front to the earliest canned items in the back. A venerable treasure hunt in the freezer as you walk back through time the deep you dig - pas the freshly frozen corn... past the beans... ohh, wait... over there in the corner of the basement - are those the nearly 50 pounds of harvested potatoes you see!?

Yup, that's a lot of squash. I processed at least that many yesterday, shredding three gallon bags worth, and slicing/sauteeing/freezing a bunch of the rest. What do you do to the ones you freeze?

Does Watson like squash?

And wow - fifty pounds of potatoes! NICE!

I need to start processing tomatoes.

We have frozen shredded - cubed - and even soup...

This photo was all of about 1/20th the total haul to date...
