Chipotle dos

I told you how to make you own chipotles - but I never shared what they should look like. Attached is an image of well dried and very happy chipotles.

When you are ready to use - simply cut them open - remove most of the seeds (that's where the REAL hot heat is concentrated) then chop or mince and add to things like chili, soup, stew, Mexican food - or really anything that you think might benefit from a kick of smoky hotness.

I have also added some to a coconut/tomato paste/garlic sauce - to create an AWESOME Adobo I learned about in Cozumel.
